Gluten-free Shake n Bake Chicken Recipe

Make the family favourite, shake n bake, in a healthy way your kids will LOVE!

Quinoa will be the base of our recipe today. This superfood is rich in so many fantastic nutrients, specifically protein, fibre and B vitamins + a ton of micronutrients.

Ingredients:

  • 8 chicken drumettes or 4 full chicken legs

  • Juice of 1 lemon OR a generous squeeze of bottled lemon juice, pour onto the chicken to "clean the chicken" and act as the moisture that will help the quinoa stick.

  • 1/3 cup quinoa

  • 1 tbsp spices. Be sure to watch the video for many options.

    • Options are: everything bagel seasoning, old bay spice, Montreal steak spice, savoury salmon seasoning, onion powder, garlic powder, oregano, thyme, paprika… anything really can be used! In this video, Judy added 1 tbsp everything bagel seasoning.

Instructions:

  1. Preheat oven to 400°F

  2. Put the chicken in a bowl and pour the lemon juice on top. Stir to combine and spread the lemon over all of the chicken

  3. Combine the quinoa and seasoning in a small blender and grind into a fine powder

  4. Put 1/2 of the quinoa mixture in a bag with your chicken

  5. Twist the bag to seal it

  6. Shake it to get the seasoning all over the chicken. Adding more of the powder if needed. Store the rest in an air tight container. Dispose of any leftovers in the bag.

  7. Lay the chicken out on a baking sheet lined with parchment paper

  8. Bake for approx 45 minutes to 1 hour depending on the thickness of your chicken. Minimal internal cooking temperature for chicken is 165°F
