Energy Balls Recipe

These are amazing energizing and filling little bites that I just threw together with what I had at home. Generally, you can use pretty much whatever dried fruits and nuts you like. Try different combinations of nuts, seeds, and dried fruit to see what you can create!

These little “Energy Balls” are great for kids, hiking, skiing, post-almost any exercise, and they are great for travelling. I use these a lot when I am snowshoeing, cycling or cross-country skiing. They can also make a nice dessert treat when you want a little sweet after dinner.

Ingredients:

  • 1/2 cup raisins

  • 1 3/4 cup chopped figs

  • 1 cup chopped dried apricots

  • 1 cup chopped pitted dates

  • 1/2 cup natural almond butter

  • 1 tsp cinnamon

  • 1/2 cup chopped walnuts

  • 1/2 cup sunflower seeds

  • 1 tbsp sesame seeds

  • 3/4 cup unsweetened coconut

Instructions:

  1. Place raisins in a bowl and cover with boiling water for 10 minutes.

  2. Drain and transfer to a food processor, reserving water.

  3. Add figs, apricots and dates. Process for about 1 minute.

  4. Transfer to a bowl and add peanut butter, cinnamon, peanuts and seeds. Mix.

  5. If the mixture is dry add 1 or 2 tbsp of reserved raisin water.

  6. Roll into balls

  7. Roll in coconut to cover.
